White maca (Lepidium meyenii) is a traditional Andean plant native to Peru. It grows at high altitudes in the Andes, where harsh conditions shape its distinctive character. White maca is one of the most common maca varieties, known for its naturally light-colored root and long-standing use in local cuisine.
Our white maca is gelatinized, meaning part of the starch has been removed. Thanks to this gentle process, the powder has a milder taste, is easier to blend, and is generally easier to digest. Gelatinization involves briefly heating the maca powder with water, which helps break down starch components. The powder is then dried again, resulting in a concentrated product with reduced starch content.
