We present Criollo Cacao by Señor Felipe from the Pucallpa area in Peru – an exceptional 100% cacao mass that naturally includes cacao butter. The cacao is unroasted and non-alkalized, so it keeps its authentic character, close to how it comes from the bean, without the impact of high-temperature processing.

Criollo – a rare variety with gentle depth

Criollo is one of the rarest low-yield cacao varieties in the world. That is also why pure Criollo is hard to find – farmers often blend in a portion of Trinitario beans, which provide higher yields. Criollo, however, stands out for its delicate yet rich profile: a fruity aroma, nutty undertones, and a fine, elegant bitterness. For this reason, it is highly valued for premium chocolate.

Careful processing and a natural appearance

Felipe’s cacao is processed at low temperatures. This is why it is lighter than typical roasted cacao – both its color and flavor stay closer to the original bean. Since the mass naturally contains cacao butter, your drink may show a light oily film (“fatty eyes”). This is a normal, natural trait. The butter can rise to the surface, and a slight change in shade is part of the product’s natural behavior.

How we like to prepare it

For a strong to ceremonial cacao drink, we use this simple method:
Bring 1 liter of water to a boil, add 45–50 g of cacao mass, 2 cloves, a pinch of 100% cinnamon, and sweeten with sugar or honey to taste. Simmer on low heat for about 10 minutes. You can also add milk and briefly simmer again. Everyone prefers a different style and amount – take this as a starting point and find what suits you best.

For home use and ceremony

This Criollo is wonderful for cacao ceremonies, but it is equally at home in everyday use: as a rich cacao drink, for homemade chocolate, baking, glazes, or grated into muesli. It is cacao with character – gentle, yet confident.

Store in a cool, dry, and dark place at 0–20 °C.
