We present Criollo Cacao from our second, new supplier in Peru – an exceptional 100% cacao mass including natural cacao butter, preserving its pure, natural character.

Criollo cacao is a rare, low-yield variety known for its rich aromatic profile. Pure Criollo is not easy to find, because farmers often blend in a portion of Trinitario beans, which have higher yields. Criollo is recognized for its fruity aroma, nutty undertones, and a fine, elegant bitterness – which is why it is highly valued for the best chocolates.

Our cacao is unroasted and non-alkalized, and processed at low temperatures to preserve its natural aroma and flavor. Thanks to this gentle processing, it is lighter in color than typical roasted cacao. Because the mass contains cacao butter, you may notice a natural oily film (“fatty eyes”) on your drink – this is completely normal. The cacao butter can rise to the surface, and any slight change in shade is a natural process.

Our favorite preparation method for a strong to ceremonial cacao drink:
Bring 1 liter of water to a boil, add 45–50 g of cacao mass, 2 cloves, a pinch of 100% cinnamon, and sweeten with sugar or honey to taste. Simmer on low heat for about 10 minutes. You may also add milk and simmer briefly again. Everyone prefers a different method and amount – try what works best for you. Please note: the cacao mass cannot be simply poured over with boiling water. It needs to simmer for a while, otherwise it won’t fully combine and small pieces may float on the surface.

Criollo cacao is perfect for cacao ceremonies and everyday home use – for making chocolate, baking, glazes, or even grated into muesli.

To keep its true essence, store the cacao mass in a cool, dry, and dark place. In this package the cacao is quite firm, so we recommend using a larger knife and a bit of strength. Store in the dark at 0–20 °C.

We have been informed that cacao prices have increased temporarily due to an event (such as plant disease or other damage) that affected the plantations of our main cacao exporter. We will continue to monitor the situation.
